I got a nice e-mail from our sweet Romeena today who is home from the hospital and recovering nicely. Praise God! She said she will come sit with us when she gets some strength back. I am so happy she is ok.
There is another porchter who is my prayers tonight. Facing some problems and could use uplifting. So my prayers go with them also.

November 05, 2002 - Msg 10201: Good morning, everybody!! Yep, it's me, up and at 'em! Well, up anyway, for a little while. I'm feeling remarkably well, considering the surgery and my age. Doesn't surprise me, though. I've read and caught up on things, and with all those prayers you kind, sweet people were lifting up on my behalf, how could I do anything but feel better? I have had so little pain that I almost feel guilty. Advil during the day, and a Darvocet at bedtime, and I'm pretty comfortable. I do run out of steam quickly, though - my bed and my big chair pretty much define the boundaries of my life right now. My granddaughter is here when she's not working, and runs any errands that need to be done. Sugarplum has been my little nurse and lap/foot warmer. Remarkably talented, that puppy.
I missed all the fun at Possum's surprise party. Wish I could have been there. Sugarplum said she tried to go, and was planning to bring carrots, but she wasn't sure just where Possum's rock is, and was afraid she'd get lost, so she went back home and just ate the carrots herself.
Good to see some of the old-timers visit, however briefly, and welcome to the newcomers. It was so pleasant to read and catch up - sounds like you all have had fun - wish I could have joined in, but reading is the next best thing.
Please know that I am praying for each of you, for your individual needs if they are known, and for God's wisdom and intervention when only you and He know the circumstances. Fortunately, He doesn't require that we spell it out for Him!
Well, my bed calls, think I'll answer for a little while. God made naps just for me, I think. Sugarplum says hey! --Romeena

Believe me, there's no reason in the world why a gray-haired old gal like me should be able to bounce back from a total hysterectomy and go home within 36 hours, feeling pretty near normal. No reason but the prayers of family and friends. You're so right, Asa. God is good!

Mary Wiggins, I'm so sorry to hear that your family has allergies, and therefore no pets. I can't imagine what I'd do without my dear little Plum. May I suggest that you find someone who has a Maltese, and "borrow" it for a day or two? It's entirely possible that it will not trigger your family's allergies. Unlike most dog breeds, a Maltese has no fuzzy, downy "undercoat". They are single-coated, possessing only long, silky, very human-like hair. Very few breeds can make this claim. There are many who are long-haired, such as the ShihTzu and Lhasa Apso, but almost all are double-coated. In addition to the long hair, they have the short, downy undercoat. That's where the dander resides, where the "doggie" odor arises, and where most of the matting originates. Maltese do not have this. Therefore, they don't develop an odor, carry little or no dander to irritate allergies, and they don't mat. Their hair will tangle, like a child's will tangle if not combed regularly, but it can be combed out readily. They're friendly, playful, healthy as a breed, and all in all make just delightful little companions, literally becoming a member of the family.
Well, have been up long enough. Time for a snooze. That's what I love about surgical recovery. One can nap frequently, and remain totally guilt-free! In fact, I have instructions from my doctor to take frequent naps. Is that not just a dream come true? (teehee)

November 06, 2002 - Msg 10233: Ooooohhh! A chili supper! That sounds wonderful, and it's cool enough here in North Texas to get away with it. Chili in hot weather isn't very appealing, but when that first norther blows in and the temperature drops, most Texas cooks start thinking about chili. I appreciate your kind offer, homemaker, but I'm mending nicely and will be happy to contribute to the meal. It's true, I might not be up to spending an afternoon at the stove making chili (though I do make some really mean stuff), but maybe I could bring a big bowl of guacamole. I love it, and the Plum does, too. She likes a carrot dipped in it now and then. Where and when is this chili supper? Can somebody pick us up, since I can't drive yet? Sugarplum has her little car seat to ride in.
Sterling Holobyte, you're correct - Maltese puppies do sell for quite a sum. My husband paid $425 for the Plum, and that's considered reasonable, but she would have been a bargain at ten times the price. You might find a backyard breeder offering them for less, but I'd be very, very careful. Remember, registration papers are only as good as the word of the person who sends in the litter registration request. Not that "breed purity" matters if the pup becomes your friend, but if you're getting a certain breed for a reason, then you want to be sure the pup will be true to its breed. For example, if Mary Wiggins gets a Maltese, she will want to be certain that it won't have any undercoat to produce and hold allergens. One option is to contact one of the breed "rescue" groups. You probably wouldn't be able to get a puppy, but you might find a lovely little dog that for whatever reason has become homeless. Not every little furkid has an extended family that would step in if needed, such as the Plum has. Check with your local vets, they could probably put you in touch with a Maltese rescue group, or check out the internet.
Mary Wiggins, I think the little black Scotties are cute, too. However, I do believe they have a lot of undercoat beneath the more wiry exterior coat. Might not work too well with your family's allergies.

Then for finding a rescue dog, go to www.petfinders.com they have a ton of them. As for the breeds that seem to be best with allergies, Romeenais right, the Maltese, the Poodle, & also the Chinese Crested, for those of you that could stand looking at a dog with no hair, I used to raise & show those & they are WONDERFUL little family dogs! Scotties, do tend to have skin problems themselves so that wouldn't help with a family that has allergies. The akc site also has lots of links to help you. If any of ya'll have anymore questions just holler & I'll do my best to answer them, I'll put my 25 years in the pet business to work. LOL

It has plenty of meat and beans but lots of juice, too and I like mine with tomatoes (diced and tomato sauce). I use lots of chili powder so mine is not for cowards. I made a batch of chili this week, in fact.

Well, I like ritz crackers all mixed up in my chili so I'll bring those along with the chili.

What does a maltese look like? Is it small like a Yorkshire Terrier? Please describe...

November 06, 2002 - Msg 10249: OH Sooo beautiful, Mr Bojangles hair was snow white and it looked like I parted it down the middle of his back and his hair hung to the floor, he was a dream, they are not big dogs and not smalla just right size, they are. He had BIG brown eyes that just twinkled, I miss him so as will as my dog Daisy, she was a water spaniel I belive thats what the vet said, she was coal black and so beautiful and smarter than any person on earth. I imagine there's no one on the whole porch who would know more about the subject of doggie breeds and characteristics than you would. I started to mention poodles myself, but wasn't completely sure about them where allergies are concerned. The Chinese Crested came to my mind also, but I figured only those who watch the dog shows would even know what they are! They're not a breed you see every day. I think they're adorable, but you're right, not everyone is gonna want a dog with (almost) no hair. Have you seen that picture entitled "Yes, Dear"? It made the email rounds and is absolutely hilarious. I have it, and will send it to you if you'd like. I'd post it here, but don't know how. Wish I did. Someone out there who is especially "ept" and knows how, email me with instructions and I'll try to do it. The picture is priceless.
Charlotte Tucker, it's good to see you. Yes, we Texans make our chili pretty thick and hearty. There are probably as many chili recipes around here as there are Texans who make it, and they're all good. We don't generally use hamburger, we use what the butchers refer to as "chili grind", or just "chili meat". It's the same beef that would be made into regular hamburger but is put through a very coarse grinder instead, yielding meat that is in sort of marble-sized chunks. Sometimes we throw in a little regular hamburger too, for "body". Lots of people put a little or a lot of venison in as well, though I don't. I like venison okay, but have no source for it, and that's fine with me. We're not a hunting family. A bit of ground pork doesn't hurt the chili any, but don't even think about putting ground turkey in it. I've eaten "turkey chili", and it's - well, it's er, um, well - it's turkey. Turkey should be roasted, and chili shouldn't taste like feathers. So there! 'Nuff said.
As for the rest of the chili makings, you need fresh garlic, lots of onions, chili powder (I use Gebhardt's), comino, a handful of chopped fresh cilantro, tomato sauce, maybe a can of Ranch Style Beans (yes, that's a brand), a couple of blobs of peanut butter, and a few shaves of cooking chocolate, preferably Mexican chocolate. Now you Northerners don't try to die off when you read this - don't knock it 'til you've tried it. No, it's not sweet, and you don't taste the peanut butter, but the chili surely is rich. Sorry I can't give specific amounts, but I cook by sight, smell and taste, and just throw stuff in until it looks, smells and tastes right. Drives my poor daughter-in-law crazy, as she tries to learn to make my son's favorite dishes. I'd tell her if I knew, but I don't. Never did. That's how I was taught, watching my mother, grandmother and two aunts as they cooked, and never had any written recipes. Nobody ever went away from my table hungry, though.
Well, my bed calls. Still having almost no pain from the surgery, but don't have much stamina. Up a couple of hours, rest an hour, up again, etc. I'm thankful for my insurance plan with the hospital, I'll have six weeks off, all paid time. Can't beat that.

I have eaten the soupier variety myself, and have made it on occasion, just depends on my mood. I, too, add diced tomatoes, sometimes fresh, usually the canned variety. As you said, my chili is not for the faint-hearted or those with a delicate constitution. My husband used to say that a fire-breathing dragon would slink away in fear, but it sure is good!
Miss Ellen Brown's description of Mr. Bojangles is right on for a Maltese. They're all snowy white, with big dark eyes, black noses and little black patent-leather lips. The breed standard describes them as 5-7 lbs, and that probably is held true in the show ring, though pet stock is often a bit bigger. The Plum weighs about 8 pounds. Her hair is about eight inches long, would go to the floor if I let it, but I keep it trimmed just a bit. She wears a topknot, like a little fountain, on top of her head, which I keep secured with the crocheted ponytailers like little girls wear. They usually have a little straw flower or ribbon or some such attached. Very perky and cute. As Mavis said, check out the breed websites. You'll find some marvelous pictures. One place to look is: www.angelmaltese.com. These dogs are the cream of the show circuit, and would start at about $1500, but they may have pet stock as well. I know if the awful day ever comes that I lose my little Plum, Bonnie's Angels is one place I'll look for a new friend.

All this talk of chili is making me hungry. But I'm with you Possum, I don't like the blazing hot stuff. I like my food to go down easy and not require a call to the fire dept in order to eat it. I don't know where you people are from but I've never heard of peanut butter or chocolate in chili. It just sounds weird to me. I guess I'm just a traditionalist. The weirdest I get when it comes to chili ingredients is crushing up too many crackers in mine.

November 07, 2002 - Msg 10262: Well - here near Cincinnat we have Cincinnati chili. Spaghetti is the bottom layer, chili with meat and a dash of cinnamon (special recipe), then grated cheese. That's a three way. A four way you add a layer of beans and a five way you add a layer of onions. Then it is served with oyster crackers and hot sauce for those who like it. The right hot sauce melts the cheese and your stomach lining. The most famous is Skyline and then GoldStar chili. Syline coneys are the cats meow. Steamed dogs topped off with a dash of mustard and chili sauce with cheese on top. Nothing better than an inverted three way - bottom layer cheese, spaghetti, chili, and then cheese again. Heaven...
That's Cincinnati chili!

At my house it is basic kidney beans, burger, tomato juice , macaroni, and spices. . .my husband doesn't care for Cincinnati chili.

I love cheese in my chili. sometimes I like to make my chili without beans and make frito pies with LOTS of shredded cheddar cheese. I even add ketchup to my frito pies (hard to believe, I know). Man, all this talk about food is getting difficult. My beans won't be ready for awhile, yet. Has anybody ever heard of adding a can of beer to their chili? They do that around here for the chili cook-offs. Never tried it cause I'm too embarrassed to buy beer. Everytime I buy a bottle of wine for cooking, I run into a church deacon or something. Small towns do have their setbacks.

Oh, I wanted to tell ya'll that I made chocolate chip zucchini bread the other day and it was fantastic!! I urge you to try it. Just use your favorite zucchini bread recipe and add a half a bag of choc. chips. MMMMMMMM Trust me on this one!

But why are you embarrassed? What do you think Deacon's do with all that sacrificial wine? How do you think they get through all those weddings and funerals they have to officiate at?
If you're still uncomfortable with it and you happen to run in to your deacon or other man of the cloth while you're buying a little nipper, you can just say, "I like to take a little sip every now and then. It reminds me of church."
That's if your denomination uses wine in mass. If not, I wouldn't use that one, then he'd think you're drunk in church.

That Cincinnati chili sounds good to me, too. Doesn't sound much like what I know as chili, but it doesn't matter what a dish is called, if it's good, and that sounds good. Besides, I think "chili" is one of those generic words. You know, like "sandwich". A peanut butter sandwich is a long way from a roast beef sandwich, or a BLT, but we call them all "sandwiches". Same with the Mexican "taco". When we hear "taco", we gringoes think of a folded-over and crisply fried tortilla, filled with spicy meat and lettuce and tomatoes, right? Well, to the Mexicans, a taco is like a sandwich. It's simply a word that describes a tortilla, (usually soft), folded and filled with whatever happens to be available. Many Mexican homes keep a "caldo" slowly simmering on the back of the stove, a sort of thick stew that just keeps being replenished with leftovers, seldom gets all used up. When folks come home, they grab a tortilla, spoon in a blob of the caldo, fold it up so it doesn't drip, and walk away munching. See? Generic term.
Boo, you're probably familiar with the "mole" sauce, pronounced mo-lay, that is so good with chicken. De§, I'd bet that you know about it, too. Mole, too, contains peanut butter and chocolate, as well as finely pulverized almonds sometimes. It starts with a chili powder base, and the other stuff is added according to the family's own "secret recipe". I think I've mentioned this on the porch before. Anyway, it's delicious, and you can buy prepared mole roux in your local grocery store. It's usually put up in little glass jars - you just thin it down with chicken broth, stir in very coarsely shredded boiled chicken, and serve with rice. Marvelous!
Boo, you probably already put fresh cilantro in your pinto beans, but do you ever put in a large pinch of sugar? That was my mom's secret, and no one could cook beans like she could.
Mary Wiggins, a Maltese could be said to look a little like a Yorkie, I guess, in that they're both small, moppy little dogs, with topknots. Yorkies are always in colors, though, and a Maltese will always be snow white. If he's any other color, then there was an unexpected visitor somewhere along the line, who wasn't a Maltese! A Yorkie has picked-up ears and a short tail, and a Maltese has drop ears and a spectacular plumed tail which he carries very proudly over his back, and waves it almost constantly. I've had several Kocker spaniels, (take that, censor) a Manchester terrier, a Kockerpoo who was the result of an indiscretion on the part of one of my Kockers with the ambitious little poodle next door, and I've had a Yorkie. I loved them all dearly. However, when my dear husband got Sugarplum for me, I knew I had found my breed, forever. She has been a delight, and everyone I know who has one says the same thing. On the other hand, my daughter has a precious little scruffy mixed breed who is so smart, so kind, so intuitive, that I wish I could declare her a breed and reproduce her a million times. Fancy breeds, mixed breeds, whatever. When you find a friend, you don't care what their background is. I'm only pushing the Maltese for Mary Wiggins because of her family's allergies.

About the chili with/without beans, it's whatever you prefer. I have to clarify something about that though, the rice is only as good as the chili. I first had this concoction over in this little restaurant in Hawaii, and they really had a good chili, so the mixture was just perfect. And they know how to do rice over there because of all the Japanese who live over there. I have a theory about why so many Japanese settle in Hawaii, like to hearitheregoes... I think it's because they burn out over in Japan because those workers over there work like bees and don't know how to say "slow down, what's your hurry", and then their doctors make them move to Hawaii to calm down before they have a massive coronary.
So anyway, where was I? Oh yeah, chili and rice. I know when I made some with my own chili, it wasn't as good. I think I was spoiled over there.
But try it anyway, your chili is probably better than mine.
